These look soooo yummo. I just made a spinach lasagna on-the-fly a couple nights ago with ready-to-expire ingredients and it was a great success… I actually used fresh bagged leafy spinach that had been in the fridge for about 2 weeks and was miraculously still ok to eat, and used some sour cream instead of ricotta, and about 1/4 pound of pork sausage left over from the weekend’s big breakfast. Um, so tasty! I’ll have to put your recipe for lasagna on the books, too… I love that they’re rolled up in their own little serving sizes already! What a perfect dish to serve for a large group of guests.
